Slice the pear as thinly as possible, dry in an oven and cool.
Mix the paté with the marjoram, cheese spread and lemon thyme. Thinly slice the fresh cheese.
Spread the pear slices alternately with the paté and the cheese spread, and wrap with the fresh cheese. Place the towers on a plate decorated with the chocolate, melted, and scatter with chilli flakes.
Serve with rye bread.
