Cook the pasta in salted water, drain and wash with cold water. Allow to cool. Grate the parmesan. Add the paté and cottage cheese. Mix well. Fill a pastry bag with the mixture and stuff the pasta tubes. Clean the rocket, and wash and drain well. Arrange the rocket on the plate. Cut the red pepper into tiny cubes. Place the cannelloni on top of the rocket and decorate with the pepper cubes. Drizzle some balsamic vinegar and olive oil over the top. If you prefer, top the dish with some fleur de sel.
