Cut the button mushrooms into slices and the pepper into small cubes. Beat the eggs and add salt. Heat the oil and stir-fry the button mushrooms and pepper. Transfer the mushrooms and pepper onto a plate, but leave the oil in skillet. Pour the egg mixture into the skillet. When the eggs begin to set, spread them with the paté and sprinkle with the stir-fried pepper and mushrooms. Fold the omelette and cook on both sides until crispy. When the omelette is done, sprinkle it with the chopped parsley and serve.
