Unique duck speciality

Luka Košir began his culinary career at the JB restaurant under the mentorship of chef Janez Bratovž. He soon decided to pursue his own dreams and set out on his own as head of his family restaurant Grič, where the wonders of wild nature are transformed into culinary works of art. His wish was to create food according to his own philosophy and identity, which is based on the use of local ingredients and on food self-sufficiency, which covers a diverse range of activities such as horticulture, foraging and hunting. Luka Košir is known mainly for his innovative use of seasonal ingredients and close connection with nature, which allows him to offer guests food “direct from field to plate”, as he himself says. One of the more surprising dishes in his range is ants, which he gathers himself in the nearby forest, but his house speciality is duck, which Luka raises on his own organic farm. As his speciality, duck meat is therefore the main ingredient in the new Argeta Exclusive, which is made from proper first-class meat. With the addition of vanilla and toasted hazelnuts, the new Argeta Exclusive à la chef Luka Košir surprises in its new dimension of flavour, skilfully rounded off with cardamom, cinnamon, cloves and pimento.
