Almond flour bread

In addition to being high in protein, the composition of almond flour bread makes it perfect for the LCHF diet, which has become very popular in recent years. This is based on eating less carbohydrates and more healthy fats. Almond flour bread is highly nutritious, and contains a lot of the good fats you need with this diet.

Ingredients:

200 g almond flour (ground flour – not de-oiled)
20 g psyllium
1 sachet baking powder
0.5 tsp salt
80 g melted butter
120 ml water
5 eggs

Preparation:

1. Crack the eggs into a bowl and beat them with an electric mixer for seven minutes.

2. Add melted butter and water, and mix.

3. In a separate bowl, mix almond flour, psyllium, baking powder and salt.

4. Pour the wet ingredients into the dry ones and mix well.

5. Line a 20 cm bread baking tin with parchment paper and put the thick bread mixture in.

6. Distribute the mixture evenly, and make sure to push it in against the bottom edges and corners.

7. Bake for 35–40 minutes at 180°C.

8. Check if the bread is done by pricking it with a toothpick, which has to come out clean.

9. Leave the baked almond flour bread in the tin until it cools, then put it onto a bread board and slice it.
