Flatbread

Although we usually think of flatbread as something to be enjoyed with delicious food from the grill, it also pairs excellently with Argeta, no matter which flavour you like the most. But why buy flatbread when you can make even more delicious flatbread yourself? All you need is flour, yeast, salt, sugar and oil, along with a gentle touch, because each flatbread has to be formed without squeezing too much air out of the dough. This way, you’ll make incredibly tempting homemade flatbread.

Ingredients for flatbread:

400 g white wheat flour
300 ml water
7 g dry yeast or 21 g fresh yeast
8 g salt (1 heaped tsp)
1 tsp sugar
2 tbsp oil

Preparation:

1. Put the flour into a large bowl and make a well in the middle.

2. Add dry yeast, salt and sugar, followed by oil and water. If you’re using fresh yeast, crumble it into water first.

3. Mix the ingredients well with a wooden spoon to form a sticky dough. Leave it to prove for 30 minutes in a warm place where there’s no draught. If the dough doesn’t rise within that time, leave it for a further 10 minutes.

4. Preheat the oven to 250°C.

5. Sprinkle your work surface with plenty of flour and place the dough onto it. Because the dough is sticky, knead it quickly and make sure not to overwork it.

6. Dust the dough with flour and turn it over a few times, forming it into a loaf.

7. Halve the loaf and then cut both halves again so that you get 4 roughly equal pieces.

8. Shape each piece into a ball and place them onto a baking tray lined with parchment paper.

9. Cover with a kitchen towel and leave to prove for 10 minutes.

10. Using your fingertips, press onto each dough ball and form a circle. Make sure not to be too rough so you don’t squeeze too much air out of them.

11. Lightly dust them with flour, then score a grid onto them with a plastic or wooden spatula.

12. Cover the flatbreads with a kitchen towel and leave to prove again for 10 minutes.

13. Uncover them and place them on the middle rack of your heated oven.

14. Bake the flatbreads for 8–10 minutes, turning the grill function on full blast for the last two minutes so that they get nicely baked.

15. Take the flatbreads out of the oven, leave them on the hot baking tray and cover them with a kitchen towel.

16. Let them rest for 10 minutes.
