Ingredients:

7 eggs
60 g of fine, de-oiled coconut flour
120 g melted butter
2 tsp baking powder
¼ tsp salt

Preparation:

1. Crack the eggs into a bowl and beat them with an electric mixer for seven minutes.
2. Add melted butter.

3. In a separate bowl, mix the coconut flour, baking powder and salt.

4. Pour the wet ingredients into the dry ones and mix well.

5. Line a 22 cm bread baking tin with parchment paper and pour the mixture in.

6. Bake for 40–45 minutes at 180°C.
