No-yeast bread with an incredibly crispy crust

A delicious home-made bread usually involves putting in a lot of effort. But if you replace yeast with baking soda, no kneading or proving will be required, and the bread will have a lovely rustic crust and a soft centre.

Baking soda is an incredibly useful ingredient, as it can be used both for cleaning and cooking. It is an alkaline compound that creates carbon dioxide when in contact with acid. In this loaf, it reacts the same as baking powder when combined with yoghurt. But be careful not to overdo it, as it can leave an unpleasant aftertaste.

Ingredients for no-yeast bread

500 g white wheat flour
360 g set yoghurt
90 ml water
1 tsp sugar
1 tsp baking soda
1 heaped tsp salt

Preparation

1. Preheat the oven to 200°C.

2. Mix the flour and baking soda together and sift into a large bowl.

3. Add the sugar and salt.

4. Pour in the yoghurt and water mixture.

5. Mix to combine.

6. Shake out the dough onto a worksurface that’s been dusted with flour.

7. Flour your hands and shape the dough into a rather sticky loaf.

 

No-yeast bread recipe

 

8. Sprinkle flour over it, cut a cross in the top and place in the heated oven.

 

9. Bake for 40–45 minutes at 200°C.
