Different countries, different snacks: Bosnia and Herzegovina

On a culinary journey through Bosnia, you cannot miss the true Bosnian lepinja (Bosnian flatbread) And no, it does not only go well with čevapčiči (Bosnian meat fingers). We can use it in different ways as well. We roasted it, coated it with a Argeta spread, sweet roasted red onions and pickled cucumbers.

Lepinje (Bosnian flatbread) with pickled cucumbers

Ingredients:

  • 1 Argeta Chicken spread
  • paprika (smoked)
  • 1 red onion
  • lepinja (Bosnian flatbread)
  • fat
  • salt
  • 1 teaspoon of sugar

Ingredients for pickled cucumbers:

  • 1-2 cucumbers
  • 1 dcl of vinegar
  • 5-6 dcl of water
  • salt
  • dill
  • 4 peppercorns

Pickled cucumbers: Pour a 1:5 mixture of vinegar and water into a litre glass jar. Add 1 teaspoon of salt, pepper, 2 sprigs of dill and cucumbers cut in half lengthwise. Cover the jar with a plate and allow the cucumbers to ferment in the sun for 2 days.

Cut the onions into rings and lightly fry them with a little fat to glaze them. Salt in the meantime. Finally, add the sugar and fry for a bit longer. When done let the onions cool.

Cut the flatbread into slices (can also be toasted), spread with Argetas spread, sprinkle with paprika and cover with pickled cucumbers or roasted onions.
